Pedro J Torres Cilantro Sauce

Recipes that get your meal prepped, cooked and cleaned up all in under an hour are more than ideal- they become a staple in your kitchen and also for your family. If you’re looking for a traditional Spanish meal to spice things up with delicious flavor your family will love, look no further. You have got to try this fried plantain recipe with a delightful cilantro sauce.

To make this recipe you need a couple ingredients. While this may seem like a lot to collect, keep in mind that there are 3 parts to this meal: the fried plantains, chicken, and the cilantro sauce. You can always substitute or take out ingredients to cater this recipe to your personal taste and cooking abilities.

Ingredients for Chicken and Plantains:

  • 1 chicken breast
  • 2 cups of water
  • Salt to taste
  • 1 chopped tomato
  • 1 chopped garlic clove
  • 2 green plantains
  • ½ cup of oil

Ingredients for Cilantro Sauce:

  • 1 cup of cilantro
  • ½ avocado
  • 1 garlic clove
  • 1 tablespoon of white vinegar
  • 1 tablespoon of lemon juice

The first step to cooking this recipe is to poach the chicken. If you don’t know how to do that, watch this video on how to poach a chicken. You’ll want to add salt to the water, fully cook the chicken, remove from heat and then shred it.

Once you have the chicken shredded you can continue cooking by melting the butter on low heat. In the same pan, you can sauté the tomato after it’s been chopped. Add the garlic and then continue to leave on heat until the tomatoes are soft.

Peel your plantains and chop into large, round pieces. Then heat your plantains over oil for a few minutes. Once they’re hot, remove them and flatten them with a rolling pin. Throw the plantains back into the oil and fry until they’re golden brown on both sides. Sprinkle with salt once you remove them from the heat.

The sauce is fairly easy to make. Simply throw your remaining ingredients in a blender and mix until it’s processed. You can add salt until you like the flavor.

To put all of your ingredients together into a meal, put your shredded chicken on top of the fried plantains and sprinkle the sautéd tomatoes over both items. Finally, you can drizzled the cilantro sauce over the meal and you’re ready to eat!
