Perio Venezolano is another way of saying scrambled eggs. Just like Venezuelans themselves, they are spicy. Scrambled eggs are boring, so the Venezuelans added some special ingredients to spice it up. Sure Venezuelans add some onions and tomatoes, but some additional spices as well. Perico means parakeet, a type of bird, no one knows the reason this dish is named like this, but it is said that the final product resembles the colorful birds of Venezuela.
Here is what you’ll need:
- An onion
- A Red Bell Pepper
- 1 Teaspoon of garlic
- 1 large tomato
- 6 eggs,
- salt and pepper and cayenne (to taste)
Chop the onion, chop the bell pepper, chop the tomato, beat the eggs.
Fry the onion in the butter to your liking, then add the tomatoes. Cook that mixture until its nice and semi-dry. Add the salt, pepper and cayenne.
Finally, take the eggs and mix them into the onion, tomato meal.
